Jammin' for Jesus or Old Fashioned Fun!
Looking to put down the cell phone for
a few minutes, nostalgic for more simpler days filled with old-fashioned fun or
to simply remember or experience the times when we used to work with our hands?
This craft is for you!
Bro. Gary’s Very Berry Low Sugar Jam
Time: 30 minutes
Yield: One 1 pint Ball canning jarCalories: 25 per tablespoon
INGREDIENTS
1 box of “Low Sugar” Sure Jell fruit
pectin (In the Jell-O gelatin aisle.)1 tablespoon butter (helps reduce foaming)
2 cups of any fresh berry washed and drained - raspberries, black berries, blueberries, elderberries, loganberries, etc.
1 full cup water
½ cup Truvia or Splenda baking blend
¼ cup sugar
INSTRUCTIONS
Mix the dry ingredients in a bowl – the pectin, Truvia and sugar. Place the fruit, butter, water and dry ingredients into a sauce pan. Stir and bring to a boil and gradually mash the fruit with a slotted spoon as it cooks, careful to be stirring frequently. Bring to a rolling boil for about 3 – 5 minutes to reduce and thicken. Cool in a container or jar in refrigerator. There are about 6 grams of carbohydrates per 1 tablespoon serving. Regular full sugar jam has about 15 grams of carbs. The recipe makes about one 1 pint Ball canning jar full of fresh jam!
BONUS TREAT
Pick up a pack of Pillsbury pie crust
or puff pastry sheets in the dairy case.
After the jam cools and jells, spread it on sheets of pastry, roll,
brush with milk, sprinkle with cinnamon sugar and bake on an ungreased cookie
sheet at 350 until golden brown (about 20 minutes). Slice and serve with your
favorite coffee or tea.
